The Mandalorian is a novel for the 9-12 age range, written by Joe Schreiber (Death Troopers). The book language is very clear and it is an easy read, which will take you through all the 8 episodes of the first season of the TV show. While there’s few things new (aside from naming some background characters), you can easily evoke the feeling and ambience that made such a great season.

The book also has some color photos, as is usual in this age segment. Not really intended for adults, but your kids will probably love this one.
